A Eurasian magpie, the bird of Saga Prefecture, flies across the shop curtain and again on the cooks' whites, which tells you immediately how seriously this Japanese restaurant takes where it comes from. The chef sources rice, beef, and yuzu pepper from Saga, and serves them on antique Karatsu and Imari ware. Each dish arrives only after you've finished the last, Osaka-style, and nothing on the plate is decorative. It holds a Michelin star.
