Ten seats, one seating, everyone arrives together, and then the chef begins. Kaido is a sushi bar built around the Edomae tradition, transplanted to Valencia and rerouted through its coastal waters, with the red prawn doing a lot of the heavy lifting. The chef's movements and explanations are as much the experience as the nigiris themselves. It holds a Michelin star, which the ten of you will have plenty of time to contemplate.
