    The chef came up in Kyoto, and the kitchen makes that lineage plain: tofu skins, Kyoto vegetables, and broth dishes that are quiet and clean rather than showy. Kanshin is a ryotei, so the pacing is ceremonial and the room keeps itself very calm. A round of smaller dishes opens the meal, then guests choose from the menu at their own pace, which is a gentler structure than many places in this register tend to allow.
