The counter wraps the open kitchen, and the room is in constant motion, a young team pivoting between courses while Chef Takeshi Sato moves through it all with the calm of someone who has nothing to prove. This is a Japanese kappo omakase, freestyle and personal, with most ingredients flown in from Japan. It holds a Michelin star, and the dashi alone explains a good portion of why.
