Yoshihiro Murata runs this three-Michelin-star Kyoto ryotei as something between a fine dining institution and a culinary embassy, training chefs from abroad in the grammar of kaiseki while quietly folding in a Western ingredient here and there. The setting carries the full weight of Higashiyama formality, so dress accordingly and arrive unhurried. The food moves slowly forward while staying deeply rooted, which is a harder trick than it sounds.
