    Votive lanterns and near-silence greet you at the door of this kaiseki restaurant tucked into Higashiyama, where the mood lands somewhere between mountain retreat and tea ceremony. Chef Hitoshi Ishihara studied Zen alongside his cooking, and the philosophy shows: each dinner is treated as a single, unrepeatable gathering, portions are generous, and the conversation between kitchen and table runs close. It holds three Michelin stars.
