    A tight counter in Tampa running a multicourse contemporary Japanese tasting menu, with a Michelin star to its name. The kitchen pulls bluefin tuna and uni from Tokyo's Toyosu Market weekly, then does unexpected things with them, pairing wagyu with aged parmesan or turbot in a tomato-miso emulsion. The pacing is unhurried, the team genuinely chatty, and a solid list of premium sakes by the glass gives you something to debate between courses.
