La Borie
Farm-to-table New American
The butter is house-made. So are the vinegars, the pickles, and most everything else, because the chef-owner runs a farm in Haute-Loire and trucks the harvest to Paris once a week. La Borie is a set-menu restaurant where the kitchen builds surprise menus around whatever arrived, so the seasons do the deciding. Dishes tend toward quiet simplicity rather than architectural drama, which takes more confidence than it looks.
