    The dining room sits inside a former cardinal's palace, all painted ceilings and antique furniture, which sets a certain tone before anyone's even looked at the menu. This is a set-menu restaurant in Avignon's most storied hotel, cooking squarely from the south of France with the kind of seasonal commitment that predates the trend by a considerable margin. Two, three, or four courses, depending on appetite and ambition.
