The menu at this Avignon restaurant takes its cue from a portmanteau the chef invented, "Pérouvence," blending Provençal roots with Peruvian spices from his wife's homeland. Acidity, smoke, and aji peppers turn up alongside local squab and celeriac in a dining room with a plush Belle Epoque interior that has no idea how adventurous the food has become. The wine list pulls from both countries, which feels only fair.
