A tiny bakery in the 11th with a counter and not much else, where the laminating is so thorough the apple chaussons look like ripples on a pond. The dough leans crisp rather than buttery, a fair warning if you like your croissants rich, and the fillings, vanilla applesauce and homemade gianduja, run a little too sweet. The sesame-seed sourdough is the better breakfast move, especially with soft butter.
