A short menu of carefully composed plates in a relaxed dining room in Le Mans, where a chef who trained in Paris came home and kept things unfussy. The cooking is modern French but not showy: good ingredients, clean technique, nothing buried under a concept. The kind of place where the beef and the clementine tartlet do the talking, and the service is warm without hovering.
