Sweetbreads, tripe, brains, trotters, and a confit suckling pig head that makes regular appearances on everyone's phone: Javi Estévez built a Michelin-starred restaurant around the parts of the animal Madrid used to eat before it got self-conscious about such things. The format is tasting menus, so dress accordingly, and the room is grown-up without being stiff. The kitchen's motto, that they specialize in offal but do other things too, is doing a lot of charming understatement.
