This is a trad-rooted fine dining spot on a narrow street near the river in central Bilbao, running a weekday lunch set menu alongside two longer tasting menus that dig into regional cooking and old flavors. It draws a crowd that books ahead, because you have to: the place fills up fast and stays that way.
