Le Chalet de la Forêt
Modern French
A two-Michelin-starred restaurant tucked against the edge of the Sonian Forest, with a terrace that makes the woodland feel like part of the dining room. Pascal Devalkeneer runs the kitchen with a precision that reads as almost quiet, sourcing Aveyron lamb and Brittany abalone and honey from his own hives. The sommelier leans hard toward Burgundy, which, given the cooking, is not a bad instinct.

Seabass with bay leaf
“For example, he may delicately perfume seabass with bay leaf, adding green asparagus and black truffle, before adding the final definitive flourish, a vivacious dressing of confit shallots, a gutsy gravy and a last-minute hollandaise sauce.”
