    A former priory a short walk from William the Conqueror's fortress, Le Dauphin is a cosy, atmospheric restaurant that leans hard into Normandy's larder. The kitchen runs the regional classics alongside more contemporary plates, and tripe à la mode de Caen holds its ground on the menu like it owns the place. Crêpes suzette, flambéed tableside, close things out with the kind of theatre that never gets old.
