    A heated outdoor pool in the shadow of Mont Blanc, steam curling off the water in winter, is Les Aiglons' opening argument. It's a modern Alpine luxury hotel that sidesteps the usual choice between ski-bum hostel and fussy chalet throwback, with bold interiors, a full garden spa, and an impressively low carbon footprint achieved partly via a wood-chip pool-heating system, which is exactly the kind of detail you mention at dinner.
