This is a two-Michelin-starred fine dining room inside Monaco's Métropole hotel, all bronze and ivory and gold, dressed up by Jacques Garcia and serious about it. Chef Christophe Cussac, a Robuchon alumnus, moves between classic French technique and Mediterranean instinct with the kind of ease that comes from doing this a very long time.
