    A grand piano anchors the first room, and if you show up when someone is playing, the whole dining room shifts a little. Lokanta is the restaurant inside the old Divan Hotel near Taksim, and it carries the same formal, unhurried energy as the building around it. The menu is à la carte and modern Turkish, drawing on regional ingredients with enough ambition to feel like an occasion. Dress accordingly.
