An open-air courtyard on Macedonio Alcalá, strung with atmosphere and regulars who clearly never need the menu, anchors this fine dining institution in Oaxaca's Centro. The kitchen leans into Oaxacan tradition without being enslaved to it, and the mole sampler alone reads like a graduate seminar in sauce. The house makes its own mezcal, which finds its way into the cocktails. A Michelin star.
