La Olla is a Oaxacan restaurant in the Centro Histórico, the kind of casual room where the menu reads like a defense of the region's culinary traditions. Chef Pilar Cabrera, who also runs a local cooking school, has built a following around mole negro and squash blossom quesadillas. The Michelin Guide awarded it a Bib Gourmand.
