Lumache is a sixteen-seat Italian pasta room where the water boils close enough to the tables that glasses fog, all of it lit by drippy candles and scored by yacht rock. There's a multi-course tasting, though ordering a la carte lets you keep better track of the damage. Seats vanish in monthly booking drops, so people sign up for the waitlist or show up at opening and plead, politely, with real conviction.
