    The chicken liver mousse comes with olive jam, which tells you exactly what kind of brasserie this is. Lumière sits inside the Fairmont Century Plaza and runs a classic French playbook: fruits de mer, steak frites, a charcuterie spread with aged Iberico hams, crème brûlée done properly. The staff actually know the menu and will talk you through it, which in Los Angeles passes for a minor miracle.
