Ryan Chetiyawardana's cocktail bar on the South Bank builds its menu around five house-made ingredients, things like tree caramel and thunder mushroom, that sound like a fantasy novel and drink like a revelation. The space runs gold, blue, and silver, open and unhurried. The menu, called the Ancestral Cookbook, explains itself at the back for anyone who blank-stared at "death bitters," which is most people, and that's rather the point.
