The concept here is "sincretismo," a word the Royal Spanish Academy defines as the combination of different theories or attitudes, which turns out to be a tidy label for what three friends from Costa Rica, Colombia, and Spain are doing in this Michelin-starred dining room. Mediterranean red shrimp meets Latin American yellow chili; cuttlefish tartare gets a jalapeño gazpacho. Two tasting menus run alongside the à la carte, and the designer interior leaves the old bistro that used to occupy the space well behind.
