The only upscale hotel in La Rochelle occupies an 18th-century townhouse that was, for years, a diplomat's private residence, and it still feels that way. Mid-century rooms have parquet floors, leather headboards, and antique writing desks in a palette borrowed from the nearby salt flats. Downstairs, the bar runs afternoon tea and apéritifs by a grand stone fireplace, and in good weather the tables drift out to a sunny poolside courtyard.
