    Corn-Centric Mexican

    Salmon-tiled from floor to ceiling, Maizajo is a tortillería, taquería, and full sit-down restaurant stacked across two floors in Condesa. Downstairs, fresh tortillas in regional corn varieties anchor tacos you dress at the salsa bar; upstairs, the kitchen goes further with tamales, mole, and grilled meats on proper plates. Chef Santiago Muñoz has spent years recovering heirloom corn varieties, and the tortillas here make that case quietly but clearly.
