Oden is normally a quiet, wintry, nothing-to-prove kind of dish, and Man-u takes that as a dare. This intimate Japanese restaurant on the fifth floor in Dojima builds its menu around a big communal pot, with items pulled out and matched to different broths and condiments so each combination reads like a separate course. Beef sinew with green onion, octopus with unripe pepper, figs dressed in starchy dashi, each one nudging the flavour somewhere unexpected.
