Marufuku Ramen

Marufuku is a ramen shop on the second floor of Japantown's Japan Center mall, and the line snaking out before they open tells you everything about how the neighborhood feels about it. The Hakata-style tonkotsu runs cloudy and deep, with thin noodles and slow-cooked pork belly. The chicken paitan is lighter but no less serious. Expect a wait, and consider using that time to decide whether you're ordering the deluxe.
