Nine seats at a counter in Japantown, and the meal starts on time whether you're there or not. Yuji is a kappo counter, the less-ceremonial cousin to kaiseki, where a twelve-course progression moves through cold bites, pristine sashimi, and fried tilefish before landing on a bowl of steamed rice with pickled vegetables and miso. Matcha custard closes it out. The whole thing feels quieter and more personal than the format suggests.
