Masaikuta
Japanese
Scraped walls, waxed concrete, and mottled mirrors set the tone in this 11th-arrondissement restaurant, where the chef spent years cooking in Japan before passing through the kitchens of Bruno Verjus and Bertrand Grébaut. A single blind tasting menu runs France headlong into Japan, Mont-Saint-Michel cockles alongside Cantabrian anchovies, sauces that are technically involved but land with real clarity. A wine list approaching 400 labels is an unusually serious cellar for such an unassuming room.
