A Michelin-starred tasting room on a residential stretch of Rue Bélanger, about as far from tourist Montréal as you can get while still being in it. Chef Simon Mathys runs a five-course carte blanche menu that changes constantly and leans hard into Quebec terroir, with sauces and emulsions doing the heavy lifting. Seats around fifty, opens five nights a week, and fills up fast enough that reservations aren't optional.
