The chef trained in San Sebastian and came home with something to prove, and the tasting menu, built around fermented sauces, seasonal local produce, and serious technique, is genuinely exciting. Gangnam's well-dressed crowd fills the warm, minimalist room, and nobody looks like they regret it.
