    Warm wood, cream ceramics, and windows onto green calm set the tone for what chef Mingoo Kang is doing here: a modern Korean tasting menu that treats fermented sauces and vinegars as seriously as any French kitchen treats its stocks. Kang trained under Martin Berasategui in San Sebastián, and the discipline shows without the European fingerprints dominating. Three Michelin stars and a spot on the World's 50 Best list.
