    The views of Zurriola beach from Monte Ulía are the kind that make you forget you were supposed to be paying attention to dinner. This creative tasting-menu restaurant has been in the same family for three generations, and the current chef builds menus around Basque ingredients and the dietary habits of populations that apparently live forever. Whether that's the fish or the wine pairing doing the work is left as an exercise for the diner.
