Dorothée Meilichzon's monochrome interiors sit inside a old-school façade on Paseo Vara de Rey, which is about as neatly as Montesol Experimental summarizes itself. This boutique hotel splits the difference between Ibiza's rave-or-retreat binary, landing somewhere more quietly glamorous. The 33 rooms run to rain showers and Art Deco echoes, and the rooftop bar looks out over the city and marina in a way that makes checking emails feel vaguely embarrassing.
