The menu is written right-to-left, like a scroll, which tells you something about how seriously this kappo restaurant takes its lineage. The chef trained in Osaka-style kappo cooking and named the place as a tribute to his mentor, adding a single kanji to his own surname. The signature savoury egg custard, made with dried-plum broth and a plum glaze, came down from that same mentor, along with the serving bowls.
