    The name translates to "summer snow," and the oxymoron is a fair warning: this is a Michelin-starred Franco-Japanese restaurant where nothing sits comfortably where you expect it. The chef trained at Taillevent and the George V before channeling that French classicism through Japanese precision, with fish and vegetables arriving straight from Brittany. The result is quietly striking food built on contrast and restraint, where the barbecued notes sneak up on you.
