Niurou mian guan zi
Taiwanese
The large yellow signboard is hard to miss, which is probably the point. This Taiwanese noodle shop in Suyeong-gu built its following around soy-braised beef noodles, served in a deep, savory broth finished with chili oil and mustard-green pickles. The kitchen caps its daily noodle service to keep the broth where it needs to be, so timing matters. Fried pork chops on the side are non-negotiable for regulars. It holds a Michelin Bib Gourmand.
