This is a blind-menu restaurant in Bayonne where the kitchen sources from small organic farms in the Landes and Basque Country, then runs a single ingredient through several preparations in one sitting. The cooking leans heavily on foraged herbs and aromatic plants, which sounds precious until you taste it.
