Ten seats, one Michelin star, and a spot on the World's 50 Best list: Nusara is a small fine dining room above a cocktail bar on the Chao Phraya, with temple views from the terrace. Chef Ton draws on royal kitchen cookbooks and family recipes to build a menu of modern Thai cooking that tastes more lived-in than architectural. His brother runs the floor with the ease of someone who genuinely enjoys the job, which in this price bracket is rarer than it sounds.
