  1. The dining room at this Michelin-starred creative restaurant looks like it was lifted from a 1930s Orient Express carriage, dark wainscoting, landscape frescoes, and banquettes in a deep claret. The team, a husband-and-wife duo, leans hard into vegetables without making a fuss about it, and the fish dishes carry enough umami depth to suggest they're not just filling out the menu. Lyon's 6th, dressed up and serious.
