Wagyu served every way Japanese tradition allows, from nigiri to shabu-shabu to char-grilled, at a Michelin-starred kaiseki-influenced beef restaurant in Ginza. The chef trained in kaiseki and built this around a single devotion, which the menu makes obvious. Kimono-clad staff, lacquerware, and a traditional room do the atmosphere work while the kitchen stays focused. It reads as a dinner-only splurge, and the beef is the whole point.
