Maritime décor lines the room at this Michelin-starred modern French restaurant on the Faubourg-Saint-Honoré, where Thierry Marx has come back to the address where he started out. The cooking nods to Asia and runs on a kind of quiet precision, with soy standing in for rice in a risotto and seasonal seafood arriving in ways that feel fussed over without looking it. Polished, unhurried, and very much the 8th arrondissement.
