Japanese
The chef here tracks the seasons not by month but by ten-day intervals, a Japanese framework called junkan, and the kaiseki menu shifts accordingly. What lands on the table in the first ten days of autumn is not quite what you'll find in the last ten. It's a quiet, philosophical place in Nishiazabu where the cooking is built around the idea that this exact moment won't come around again, which sounds like a fortune cookie but tastes considerably better.
