The bar here is the main event, where glass chambers display fish mid-maturation, aging toward the nigiris they'll eventually become. This Japanese restaurant in Chamberí imports much of its seafood and builds an extensive à la carte around jukusei, the Japanese practice of carefully aging fish to deepen flavor. A wood-lined dining room sits behind it all, but most serious eaters want the counter. Tasting menus are available for the full commitment crowd.
