A medieval castle perched above Jaén, converted by the Paradores group into a luxury hotel with the kind of stone walls and vaulted archways that make modern furniture look like it wandered in from a different century. One room is named for Charles de Gaulle, who slept here on a state visit. The restaurant serves traditional Andalusian food under chandeliers, and the pool looks out over two mountain ranges at once.
