Inside the revamped Samaritaine, tucked into the Cheval Blanc hotel on the Seine, this three-Michelin-star fine dining room is the Paris project of Arnaud Donckele, who also holds three stars at La Vague d'Or in Saint-Tropez. His cooking traces a line from Normandy to the Mediterranean, and his sauces are the thing: built with the obsessive logic of a perfumer, they're worth slowing down for before the rest of the plate arrives.
