The undulating ceiling, designed to echo the tarp-covered stalls of Mexican markets, sets the mood before the food does. Tortillas are pressed to order from heirloom corn nixtamalized in-house, and the mezcal and tequila cocktail program keeps pace with the kitchen. It holds a Michelin star and a spot on North America's 50 Best Restaurants.
