The name tells you the rule: every ingredient comes from within 50 kilometers of the kitchen. This is fine dining inside Interlaken's grand old Victoria Jungfrau hotel, where the chef sometimes steps out to walk you through the menu himself, which feels less like a gimmick than it sounds. Local shrimp and regional caviar appear alongside produce the team grows themselves. There's a conventional set menu, a vegan one, and a wine pairing drawn from the same tight geography. It holds a Michelin star.
